4 large potatoes, peeled and cubed to 1 cm.
1/4 cup parsley chopped
3 medium tomatoes, peeled and cubed
1 cup finely chopped spring onions
4 tablespoons olive oil
1/2 teaspoon salt
1/2 lemon juice
Salt, thyme, cumin and cinnamon
10 black olives to garnish
Boil potatoes until cooked. Drain well. Peel and cube to 1cm. Mix all remaining ingredients in a salad bowl with potatoes. Garnish with black olives and serve in room temperature.
